Dalat Immersion with Aussie Meat Academy – A Red Meat Experience to Remember 🇦🇺🇻🇳
We had the honor to take part in Dalat Immersion, a unique culinary experience organized by Aussie Meat Academy in Vietnam. Set in the beautiful highlands of Đà Lạt, more than 15 professional chefs from across the country, alongside food bloggers and meat experts, came together to learn, explore, and compete — all centered around the excellence of Australian red meat.

The event was not only a deep dive into the premium quality of Australian beef and lamb, but also a chance to better understand the standards behind this world-class industry — from sustainable practices and animal welfare to cut utilization and product traceability.
Los Fuegos was proud to be represented by Chef Emilio, who joined in hands-on workshops with meat specialist Greg Butler, learning about the best uses for different beef and lamb cuts.
Throughout the event, chefs were randomly grouped into teams and challenged to create two dishes each — combining Australian red meat with Southeast Asian flavors, using mystery cuts and ingredients sourced from local markets.
Behind this culinary immersion is Aussie Meat Academy, a program built under the True Aussie Beef & Lamb ecosystem. It’s dedicated to educating and connecting chefs through initiatives like the Lambassador and Aussie Beef Mate networks — communities of passionate professionals who promote and elevate the use of Australian beef and lamb in kitchens across the region. 😘
